Matrey Law’s legendary strawberry cake was the Beyoncé of desserts—it never lasted long on the dining room table. At family gatherings, it was usually the first cake to vanish, leaving behind nothing but a few crumbs and a whole lot of finger-licking. This cake was so loved that it became a family heirloom recipe, passed down from Matrey’s children to her grandchildren, nieces, nephews, and now a few are even building their reputations as “the strawberry cake baker” in their circles.

The cake itself is simple, but don’t let that fool you—it’s moist, tender, flaky, and bursting with strawberry goodness. One bite and you’ll understand why it’s legendary.

I eventually passed this prized recipe on to my daughter-in-law, Courtney, who wanted to make it for my son (it happens to be his favorite cake). Late one night—11:45 p.m., to be exact—my phone rang. Now, when your phone lights up with your daughter-in-law’s name at that hour, your heart skips a beat. My mind raced: Was Tony in an accident? Did something terrible happen?

With my voice as calm as I could muster, I answered. At the other end, Courtney let out an exasperated sigh. “I baked Tony a strawberry cake,” she confessed, “but the frosting looks more like a strawberry smoothie!”

I had to chuckle. Crisis averted—it was just a cake emergency. I offered two options: “You can add more powdered sugar, or if you’ve got enough ingredients, start over. This time, go easy on the strawberry juice.”

This is Matrey Law’s famous strawberry cake recipe. It’s light and filled withstrawberry flavor.

Equipment

  • 3 8-inch round cake pans or 2 9-inch round cake pans
  • 1 hand-held or stand mixer
  • 1 cooling rack
  • waxed paper

Ingredients
  

Cake

  • 1 box white cake mix like Duncan Hines or your own recipe
  • ½ cup cold water
  • ½ cup vegetable oil or canola oil
  • 4 eggs
  • 1 small box of strawberry-flavored gelatin (recommend Jell-O brand)
  • 2 tbsp flour
  • ½ cup frozen sliced strawberries from a 10 oz. package, thawed

Frosting

  • 1 stick butter
  • 1 lb powdered sugar (about 4 cups)
  • ½ cup frozen sliced strawberries, thawed

Instructions
 

Cake

  • Pre-heat oven to 350℉
  • Prepare cake pans by lightly greasing the bottoms, then place waxed paper in the bottoms and lightly grease the waxed paper.
  • Beat toghter until smooth the following: boxed white cake mix, 1/2 cup cold water, 1/2 cup vegetable oil.
  • Add eggs one at a time, beating well after each addition.
  • Do not over beat as this will cause the cake to be tough and dry.
  • Add box of strawberry flavored gelatin, 2 tablespoons flour, and 1/2 cup thawed frozen sliced strawberries`
  • Add box of strawberry flavored gelatin, 2 tablespoons flour, and 1/2 cup of thawed frozen sliced strawberries. Beat well.
  • Pour batter evenly between the 3 prepared cake pans.
  • Place in oven at 350 degrees for 25 to 35 minutes. Check the cake layers with a toothpick to ensure that they are done.
  • Cool in pans for 10 minutes, and then remove from pans and cool completely on wire racks.

Frosting

  • Mix butter, powdered sugar and 1/2 cup of the remaining strawberries.
  • Beat until smooth and fluffy. Spread frosting over tops and sides of cake.

Notes

  • When making the frosting, avoid using too much liquid from the frozen strawberries.  This will make your frosting too runny.
  • This cake keeps well and is often better a day or two later.
