It’s been a while since I’ve visited Houston’s in Atlanta, but whenever I do, I always order the same thing—their famous Hawaiian ribeye. That steak, with its perfect balance of salty and sweet, has my heart. And let’s be honest, I’ve never once complained about the loaded baked potato that comes alongside it.
Since I don’t make it to Houston’s as often as I’d like, I decided to try recreating that heavenly steak at home. My inspiration came one quiet weeknight at Houston’s, when the dinner rush had yet to arrive. I struck up a friendly conversation with my waiter—using what I like to call my southern charm strategy. I complimented his outstanding service, praised the Hawaiian steak to high heaven, and then casually inquired about the ingredients.
Now, who could possibly resist a kind, curious lady showing such interest in his culinary knowledge? Bless his heart—he told me everything. Well, almost. Let’s just say he “accidentally” let the marinade slip.
After a few tweaks and some kitchen experimentation, I landed on a version that rivals the original. The secret? A simple yet flavorful soy-and-pineapple marinade that transforms a thick-cut ribeye (at least 1½ inches, please!) into something unforgettable. Marinate it for 40 to 48 hours, then grill it to perfection.
