The Story

The Accidental Frosting Revelation

For years, I slathered canned chocolate frosting on my cakes with the blind confidence of someone who thought no one would ever know the difference. The trick, I figured, was simple: apply it like you’re spackling a drywall. The more, the better. If anyone questioned it, I’d distract them with sprinkles or an extra scoop of ice cream.

Then came the day—cold, rainy, and loud. The kids were bouncing off the walls like they’d just come from a sugar convention, and I was too lazy (okay, sane) to brave the downpour for a store run. I needed frosting. Fast. Fake-homemade would have to do.

I flung open my cabinets like I was auditioning for a cooking show. Cocoa powder—check! I mean, it makes hot chocolate, how bad could it be? Granulated sugar? Yes. Because, as the Sound of Music (or was it Mary Poppins?) taught us, a spoonful helps… something. Don’t quote me. Powdered sugar—goldmine! A whole 16 oz. bag, surely enough to calm the sugar gremlins currently destroying my living room.

Butter? Of course. As my Southern grandmother—Matrey Momma—used to say, “Everything tastes better with butter, including regret.” Vanilla? Tossed it in for balance. I was on a roll. Then I paused… something was missing.

I opened the fridge, hopeful. Water? Absolutely not. Milk? Gone. Then I spotted it—heavy cream, just sitting there like a forgotten hero. I figured, “Milk’s fancier cousin will do.”

I splashed a few tablespoons into the mix, gave it a whirl, and five minutes later… perfection. Rich, smooth, homemade chocolate frosting that made the canned stuff look like a bad prank.

And the best part? The kids were silent, mouths full, eyes wide. Victory. Sweet, chocolatey, victory.

Chocolate Frosting

Equipment

  • Stand or hand-held mixer

Ingredients
  

  • 3 cups confectioners' sugar
  • 3/4 cup unsweetened cocoa
  • 1 stick butter softened
  • ½ cup heavy cream
  • 1 teaspoon vanilla

Instructions
 

  • Sift sugar and cocoa together into a large bowl. In another bowl, combine 1 cup of sugar mixture with butter and 1 tablespoon cream, beating until smooth.
  • Add another cup of sugar and another tablespoon of cream, beating well. Continue until all ingredients are combined and the frosting is fluffy. Beat in vanilla.
  • Spread frosting on top of one round. Place the second layer on top and completely cover the top and sides with frosting.

Tip
  • You can use half and half or milk instead of heavy cream
